Admin e-mail overview & delete stored customer emails

I'm not following your request. Are you asking for a "Delete" option next to each email in the mail log under Account Actions > View Mail Log on the client profile page?
Yes, exactly, the system administrator should be allowed to delete emails (View Mail Log) that contain sensitive information, for example and also emails that may have been sent incorrectly or accidentally.
